Brent's 1 Pot Gumbo

I've never been to Louisiana but I love Cajun food! Here is an easy 1 pot gumbo dish that anyone can make. No roux necessary, but you can add it for thickness if you want.

In your soup pot, cook 1.5-2lbs chicken with a little olive oil.
Remove to cool and leave liquid in pot.
Add 3tbsp minced garlic, 2 diced onions, and 4 diced stalks of celery with oil & butter to sauté/caramelize. It should be pretty brown.
Pull apart chicken while waiting.
Add 6 cups chicken stock and 10oz crushed tomato.
Add pulled chicken.
Add 2tbsp Cajun spice, Tabasco, Salt & Pepper to taste.
Add frozen corn & okra.
Simmer on low boil for 30min-1 hour.
Add shrimp for the last 10 minutes.
make 1-2 cups white rice on the side.
Serve in wide bowl. Use 1/2 cup scoop to make rice mountain in the middle & ladle soup around it.
